Description
Also known as green gram, mung beans are a legume widely used in Asia. They are a type of pulse that has a good nutritional balance. It is a small, olive green coloured bean that has a subtle sweet flavour and are super versatile in both hot and cold dishes. Wonderful for fresh sprouts.

Suggested Usage
Try not to over cook. Mung beans are very easy to overcook and become mushy.
Mung beans can be sprouted and made into a delicious paste, or cooked whole and added to a variety of sweet and savoury recipes. Cooked mung beans are delicious in salads, veggie burgers, soups and hot pots, or used to make a delectable paste.
To sprout mung beans, soak them in a jar of cold water for about 8 hours or overnight, drain and rinse thoroughly.
To cook mung beans, soak them overnight or for 12 hours before adding a 1:4 ratio of beans to boiling water. Cover and simmer for 40-60 minutes or until tender.

Storage
Store in an airtight container in a cool, dry place, away from direct sunlight.
Refrigeration recommended in warm climates.
