Description
Cavatelli are small pasta shells from egg lesssemolina, with a gap through the middle which is great for capturing the sauce, have an elongated shape with a hollow cavity made by pressing ones fingers into small pieces of pasta. Made from three simple ingredients, durum wheat semolina flour, lukewarm water, and a pinch of salt, cavatelli are considered to be one of the oldest pasta types.

USES
Suggested Usage
Commonly cooked with garlic and broccoli rabe. A variant adds ricotta cheese to the dough mix. Or perfect to serve cavatelli is with dried sweet peppers known as pepper oni cruschi, breadcrumbs and chili pepper.
