Breakfast Banana Bran Loaf
Ingredients
- 1 cup plain flour
- 2 tsp mixed spice
- 1 ½ cups bran flakes or wheat bran
- ½ cup raisins
- ½ cup manuka honey
- ¼ cup rice bran oil
- 3 large ripe bananas, mashed
- 1 tsp vanilla extract
- 2 eggs
- ¾ cup plain yoghurt
- 1 tsp baking soda (sifted)
How to make
- Preheat oven to 200 degrees Celsius, line a loaf tin with baking paper
- Sift flour and mixed spice into a medium bowl. Stir in a pinch of salt, bran flakes and raisins
- In a large mixing bowl whisk together honey, oil, banana, vanilla, eggs, yoghurt and baking soda until smooth
- Fold the flour mixture into the wet mixture with a large metal spoon until combined, being careful not to over mix
- Pour into prepared loaf tin and bake for approximately 25 minutes or until golden and cooked through.
- Delicious fresh or toasted for breakfast sprinkled with fresh berries, yoghurt and a drizzle of honey
