這種咖啡豆採用特別的發酵方式。白蘭地酒桶發酵法將水洗後的生豆放入橡木桶進行低溫發酵,因此生豆發酵後會具有白蘭地純、香、甜的風味。

白蘭地別名為葡萄酒的靈魂。與一般葡萄酒相異，葡萄發酵後會先經過蒸餾萃取高濃度酒精原液，再入桶陳年。原液會在陳年過程中分解與吸收橡木桶內壁的木質化合物，最後成為具琥珀色酒身與荔枝蜂蜜香氣的白蘭地。
