Vegan Chickpea Yellow Curry

Ingredients (serve 2-3)

1 tin Chickpeas, drained
1 tblsp Cooking Oil
1/2 jar Organic Yellow Curry Paste
400ml Coconut Milk
9-10 Cherry Tomatoes, halved

How to make

  1. Heat oil in a heavy based saucepan or pot, then quickly fry Mekhala Organic Yellow Curry Paste.

  2. Add coconut milk, bring to gentle simmer and add chickpeas.

  3. Simmer till cooked (about 1 min), then take off heat.

  4. Add in cherry tomatoes.

  5. Serve hot with rice, lime and fresh coriander.
