Description

Organic fregola, or giant couscous,is made from the finestcrushed durum wheat semolina, not ground semolina, which is used to make pasta. Itlooks like toasted breadcrumbs or large pearls of couscous.It has a flavour of a nutty, toasted pasta which makes it a satisfying main ingredient in a pasta salad or as a side dish to seafood.

USES

Suggested Usage

Perfect for salad and pasta. Fregola is often added to soups too, adding with somemeatballs, tornspinach, and chicken stock. Fregola also works beautifully with a small drizzle of olive oil, grated pecorino cheese, and diced parsley.

Bring 4 cupswater with a pinch of saltto the boil and add 1 cup fregola. Cook for 8-10 minutes until al dente. For a hearty flavour, use chicken or vegetable stock for some or all of the cooking liquid.
